Katrin Hecker, professional chef, creates great vegan "farm-to-table" menus in her supperclubs and, thanks to her parents who run an organic market garden in Olching near Munich, always has an eye on seasonal products.
One of her first projects during her apprentice at the Ritz-Carlton Hotel was to create a seasonal vegetable calendar as a poster to hang up.
